Food Allergies on DCL?

Hi. I'm new here, and I'm really excited that I've found you. We are going on a 7-night Western Caribbean cruise in November, and we have a 9-year old son with life-threatening food allergies. We have had such good experiences at WDW with how well they accommodate his food needs (no nuts, peanuts, soy, or bananas), and I'm hopeful that DCL will be the same way. We sent in a medical form when we made our reservations, but I'm wondering if there is any way that I can get information about food ingredients prior to going. For WDW, we always contact a woman named Brenda Bennett who helps us take care of everything with the chefs ahead of time. Is there such a person that I can contact with DCL? Any other advice from anyone? I'd love to be able to plan out our meals.....what he can eat, where, etc. Thanks!!!
