Chicken and Wild Rice Soup Last week when I was visiting DD after her surgery, I decided to make chicken and wild rice soup as it was something that I knew she would be able to eat. I adapted a recipe that I got from DBF's DM, and it turned out so good! :yummy: I cooked a pound and a half of chicken breasts on the Forman grill, and then shredded the meat. Next I cooked up a one pound (?) package of brown and wild rice. I was happy to be able to find Minnesota wild rice on the shelves of a Phoenix grocery store! :p Then in a big stock pot I started cooking diced celery and carrots in a little bit of butter. Once they were starting to soften, I added 32 ounces of chicken broth along with 2-3 more cups of water. I then added the cooked chicken and wild rice. For seasoning I just used salt, pepper, and Emeril's "Essence of Emeril" seasoning. I simmered it on the stovetop for approximately 45 minutes until it had thickened. Even though it was around 114 degrees outside, we enjoyed nice big bowls of chicken and wild rice soup! :D |
